Plan Ahead for Lunch

The old adage goes, “if you fail to plan, plan to fail.”  And while we don’t generally feel like failures when eating lunch, a little planning can go a long way.  Whether it’s your lunch or bagged lunches for your kids, plan ahead, really far ahead!  Small jelly jars are perfect for freezing soups, individual portions, and one-dish meals.

  Ice cube trays are great for freezing small portions of sides or condiments like apple sauce, Bar-B-Que sauce, or hummus that you can throw into a small container for a lunch box.  Plan ahead by portioning snacks, chopping and peeling fruits and veggies, and cooking portions ahead of time.  Then, the night before, go ahead and set out the lunchbox with reusable napkin and silverware, set any items that need to thaw in the refrigerator, add snacks, and fill water or milk containers.  Then, there’s no rush in the morning to make sure everyone has a healthy lunch!
