Pumpkin Recipes

Pumpkins are everywhere this time of year!  And they’re such a versatile fall fruit.  When it comes time to carve those scary jack-o-lanterns, don’t throw out the meat and seeds! Use all that pumpkin goodness for cooking and snacking.  Pumpkin is great for soups and pies, but have you ever considered pumpkin macaroni and cheese or pumpkin cheesecake?  And don’t forget about pumpkin pancakes and muffins!  You can create a tasty and healthy snack by separating out those pumpkins seeds, boiling them in salt water for about 10 minutes, then drain and set them on a baking pan that has been prepped with a table spoon of olive oil.  Bake in a 400 degree oven for about 10 to 20 minutes, or until the seeds begin to brown, and enjoy!  Find the full recipe for toasted pumpkin seeds and other fall treats at SCETV dot org slash Earth Sense
