Radishes are a root vegetable that don’t need much depth to grow inside- repurposed milk cartons do well for just a few seeds. Potatoes are another vegetable that grow well indoors. Beans, salad greens and of course, your herb garden are all great indoor growers, but be sure your pots have drainage holes as these are particularly susceptible to root rot.
