Vegetables are good year-round, but if you’re getting bored with the same old recipes, perhaps you should re-think the way youprepare vegetables

Asparagus, of course, can be added to your salad and even roasted in the oven with a little parmesan cheese, but have you thought about sautéing it with a stir fry or pureeing it in the blender to make a soup?  Broccoli is always good steamed with a little melted cheese, but try spicing it up by roasting it with a little salt and pepper in the oven.  Fresh cucumbers taste great on a salad or as an any-time snack, but think about slicing it length-wise and boiling it to create a healthy pasta alternative.  Sweet potatoes are versatile as a pasta alternative, too, but they can also be sautéed, roasted, boiled, and even pureed as soup!
