Sesame Kelp Noodles

When trying to stay healthy and cook hearty meals at home, it can be tempting to just order out for some Chinese food.  But you can make delicious, low calorie and MSG free Asian style noodles at home!  Start with a package of kelp noodles (that’s K E L P noodles).  These are gluten free, low in carbohydrates and can be found at most health food stores. 

Kelp noodles can have seaweed like crunch to them, and the texture is different than traditional noodles, but they are a great pasta substitute!  Soak the noodles in warm water for thirty minutes, then rinse and drain the noodles and place them in a dry bowl.  In a separate bowl, mix a quarter cup of almond butter, a table spoon of sesame oil, a table spoon of vinegar, and a table spoon of honey.  Toss the noodles with the sauce and serve with your favorite teriyaki chicken, tofu, or even Thai chicken wraps.
